These low carb 3-ingredient bacon pickle bites are the kind of easy little appetizer that disappears before the rest of the food even hits the table. They bring together smoky bacon, tangy pickles, and creamy cheese for a salty, crunchy bite that feels right at home at backyard cookouts, game days, and family snack spreads. Since they use just a handful of ingredients, they are especially nice when you need something quick that still feels fun and special.
Serve these warm with ranch dressing, a little spicy mustard, or your favorite sugar-free dipping sauce. They also fit in nicely alongside grilled burgers without buns, bratwurst, deviled eggs, fresh veggie trays, or a simple coleslaw. For a party spread, I like setting them out with toothpicks and plenty of napkins since they tend to go fast.
Low Carb 3-Ingredient Bacon Pickle Bites
Servings: 8
Ingredients
8 dill pickle spears
8 ounces cream cheese, softened
8 slices streaky bacon
Directions
1. Preheat the oven to 400°F and line a baking tray with foil for easy cleanup.
2. Pat the pickle spears dry very well with paper towels so the filling and bacon stick better.
3. Spread cream cheese along each pickle spear, using about 1 tablespoon per spear.
4. Wrap each cream cheese-covered pickle spear with 1 slice of bacon, spiraling it around so most of the pickle is covered. Place them seam-side down on the prepared tray.
5. Bake for 25 to 30 minutes, or until the bacon is crisp and browned and the filling is hot and just starting to peek out.
6. Let them cool for 5 minutes before serving so the filling can settle slightly.
Variations & Tips
Air fryer method: These cook nicely in the air fryer too. Place them in a single layer at 375°F and cook for about 12 to 15 minutes, checking until the bacon is crisp.
Picky eater version: If someone in the family likes a milder bite, use smaller pickle spears or cut them into shorter pieces before wrapping so the pickle flavor is not quite as strong.
Cream cheese tip: Softened cream cheese spreads much more easily and helps everything stay together. If it is still too firm, let it sit at room temperature a bit longer before assembling.
Extra crisp bacon: If your bacon is thick-cut, it may need a few extra minutes in the oven. You can also place the bites under the broiler for 1 to 2 minutes at the end, watching closely so they do not burn.
Make-ahead idea: You can assemble these a few hours ahead, cover, and refrigerate until ready to bake. That makes them especially handy for cookouts and holiday snack tables.
