There is something mighty comforting about a recipe that asks almost nothing of you and still turns out like Sunday dinner. This slow cooker 4-ingredient buttery garlic chicken is the sort of meal busy home cooks have leaned on for years, especially when the day is full and supper still needs to feel hearty and homemade. It reminds me of the practical Midwestern way of cooking: simple pantry staples, a dependable crock, and a little patience that turns plain chicken into tender, juicy bites bathed in buttery garlic drippings.
This chicken is especially good served over mashed potatoes, buttered egg noodles, rice, or even a thick slice of toast to catch every bit of that rich sauce. For a full plate, add green beans, roasted carrots, sweet corn, or a crisp side salad to balance the richness. If you are feeding a family, a pan of biscuits on the side never hurts one bit.
Slow Cooker 4-Ingredient Buttery Garlic Chicken
Servings: 4 to 6
Ingredients
2 pounds boneless, skinless chicken thighs or chicken breasts
1/2 cup unsalted butter, sliced into pieces
6 cloves garlic, minced
1 packet dry Italian dressing mix
Directions
1. Lightly grease the inside of your slow cooker if desired, then arrange the chicken pieces in an even layer in the bottom.
2. Sprinkle the minced garlic evenly over the chicken, then shake the dry Italian dressing mix across the top so every piece gets seasoned.
3. Place the butter pieces over the seasoned chicken, covering the top as evenly as you can.
4. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is fully cooked and very tender.
5. Spoon some of the buttery juices over the chicken before serving. Serve the pieces whole or shred them lightly right in the pot for an easy supper.
Variations & Tips
Use thighs for extra richness: Chicken thighs stay especially juicy in the slow cooker and are my first choice when you want the most tender result. Chicken breasts work just fine too, but be careful not to overcook them.
Add a little broth if you like more sauce: If you want extra liquid for spooning over potatoes or noodles, add 1/4 to 1/2 cup chicken broth at the start. You will still get that buttery garlic flavor, just with more drippings in the pot.
Finish with fresh parsley or a squeeze of lemon: Even though this is a humble 4-ingredient dish, a little fresh parsley or lemon right before serving can brighten the whole pot and make the rich butter taste a touch lighter.
Turn it into sandwiches or bowls: Shredded leftovers make wonderful sandwiches on toasted buns, and they are also good spooned over rice bowls with steamed vegetables. This is one of those practical recipes that stretches beautifully into a second meal.
