This slow cooker 3-ingredient cherry limeade cobbler is the kind of easy summer dessert that feels almost too simple to work, but it always does. It has that nostalgic potluck energy I love, especially around the Fourth of July, with sweet-tart cherry pie filling, bright citrus flavor, and a buttery cake-like topping that turns golden right in the crock. It is exactly the sort of dessert busy people keep coming back to because you can throw it together in minutes and still carry out something that gets scraped clean.
Serve this cobbler warm straight from the slow cooker with big scoops of vanilla ice cream or whipped topping. If you are setting out a summer party spread, it fits right in next to grilled burgers, barbecue, fruit salad, and lemonade, and the cherry-lime flavor is especially good with other picnic favorites that lean a little smoky or salty.
Slow Cooker 3-Ingredient Cherry Limeade Cobbler
Servings: 8
Ingredients
2 cans cherry pie filling, 21 ounces each
1 box cherry chip cake mix, about 15.25 ounces
1 can lemon-lime soda, 12 ounces
Directions
1. Lightly coat the inside of a 6-quart slow cooker with nonstick spray or a thin layer of butter to help prevent sticking.
2. Spoon both cans of cherry pie filling into the slow cooker and spread them into an even layer.
3. Sprinkle the dry cherry chip cake mix evenly over the pie filling. Do not stir.
4. Slowly pour the lemon-lime soda over the top, covering as much of the cake mix as possible. Still do not stir; the layers should stay separate.
5. Cover and cook on High for 2 to 2 1/2 hours, or until the topping is mostly set and the edges are bubbling. If your slow cooker runs hot, check early.
6. Turn off the slow cooker and let the cobbler rest uncovered for 15 to 20 minutes before serving so the topping can firm up a bit.
Variations & Tips
Make it extra citrusy: Add a little fresh lime zest on top right before serving for a brighter cherry-lime flavor. It is not required, but it makes the dessert taste even more summery and gives the top a really pretty finish.
Use the right slow cooker size: A 6-quart slow cooker gives the layers enough space to cook evenly. In a smaller cooker, the cobbler may be too deep and stay soupy in the center.
Do not stir the layers: This is one of those dump-style desserts where leaving everything layered is what creates the cobbler texture. Stirring will make the topping gummy instead of nicely set on top.
Plan for serving at parties: This is great for cookouts because it can stay right in the slow cooker on the counter. I like to set out bowls and ice cream and let everyone scoop their own while it is still warm.
Try a flavor swap: If you cannot find cherry chip cake mix, white or yellow cake mix will still work, and the dessert will keep that sweet-tart cherry limeade feel. The cherry version just adds a little extra color and fun for summer gatherings.
