This slow cooker 3-ingredient strawberry acai cobbler is the kind of low-effort dessert that saves the day when you need something fun, fruity, and crowd-pleasing without turning on the oven. It has that easy dump-and-go charm busy weeknights and summer get-togethers call for, and the sweet-tart strawberry acai flavor makes it feel a little more special than a standard cobbler. It is especially perfect for potlucks and pool parties, since the slow cooker keeps everything warm and jammy until it is time to serve.
Serve this cobbler warm on its own or spooned into bowls with vanilla ice cream, whipped cream, or a little extra fresh sliced strawberry on top. For a casual summer spread, it pairs nicely with grilled burgers, barbecue chicken, or simple sandwiches, and for drinks, iced tea, lemonade, or sparkling water all work really well alongside the bright berry flavor.
Slow Cooker 3-Ingredient Strawberry Acai Cobbler
Servings: 8
Ingredients
1 box strawberry acai cake mix, about 13.25 to 15.25 ounces
1 can strawberry pie filling, 21 ounces
1/2 cup unsalted butter, melted
Directions
1. Lightly grease the inside of a 6-quart slow cooker. Spread the strawberry pie filling evenly across the bottom.
2. Sprinkle the dry strawberry acai cake mix evenly over the pie filling, covering the surface as much as possible.
3. Drizzle the melted butter all over the cake mix, trying to moisten as much of the top as you can without stirring.
4. Cover and cook on high for 2 to 2 1/2 hours or on low for 4 hours, until the filling is bubbly and the top looks set with golden brown spots.
5. Let the cobbler rest uncovered for 10 to 15 minutes before serving so the filling thickens slightly. Spoon warm into bowls and serve as is or with vanilla ice cream.
Variations & Tips
Make it extra berry-forward: If you have fresh strawberries to use up, scatter 1 to 2 cups of sliced berries over the pie filling before adding the cake mix. It is still wonderfully simple, but the fresh fruit adds texture and makes it feel even more summery.
Watch for dry spots: Slow cooker cobblers often have a few dry patches on top, and that is completely normal. If a large area still looks powdery halfway through cooking, drizzle over 1 to 2 extra tablespoons of melted butter to help it brown and set more evenly.
Line for easier cleanup: A light coating of cooking spray works well, but a slow cooker liner can make cleanup much faster, especially since the fruit filling gets sticky around the edges. This is a great shortcut when you are bringing dessert to a party and do not want to scrub the crock later.
Try a different topping style: For a more dessert-like finish, serve each bowl with whipped cream, a spoonful of yogurt, or a sprinkle of granola for contrast. That is especially handy if you are serving leftovers the next day and want to freshen them up a little.
