8 bone-in, skin-on chicken thighs
1 packet dry onion soup mix, about 1 ounce
1 cup apricot preserves
Directions
1. Preheat the oven to 375°F and lightly grease a rectangular baking dish large enough to hold the chicken in a single layer.
2. Arrange the chicken thighs in the baking dish, skin side up, so they fit snugly but are not overlapping.
3. In a small bowl, stir together the dry onion soup mix and apricot preserves until evenly combined, then spoon the mixture over the chicken and spread it lightly across the tops.
4. Bake uncovered for 45 to 55 minutes, or until the chicken is cooked through and the glaze is bubbling and caramelized. If you like deeper color, spoon some of the pan sauce over the chicken during the last 10 minutes of baking.
5. Let the chicken rest for 5 minutes before serving, then spoon the extra sauce from the pan over each piece.
Variations & Tips
