This slow cooker chicken and smoked sausage is the kind of no-fuss dinner that earns a permanent spot in a busy family’s meal rotation. With just four main ingredients, it turns into a hearty, budget-friendly dish that feels generous enough for a crowd, and the slow cooking gives the chicken plenty of time to become tender and juicy while the sausage adds rich, smoky flavor to every bite.
Serve this over fluffy white rice, buttery mashed potatoes, or egg noodles to soak up all those savory juices. It also goes nicely with a simple green salad, steamed green beans, roasted carrots, or warm cornbread if you want to stretch the meal and make the table feel a little extra special.
Slow Cooker 4-Ingredient Chicken and Smoked Sausage
Servings: 6 to 8
Ingredients
2 pounds boneless, skinless chicken thighs or chicken breasts
14 ounces smoked sausage, sliced into rounds
1 large onion, sliced
1 cup barbecue sauce
Directions
1. Lightly coat the inside of your slow cooker with cooking spray if desired. Add the sliced onion to the bottom, then place the chicken on top and scatter the sliced smoked sausage over everything.
2. Pour the barbecue sauce evenly over the chicken and sausage, making sure most of the surface is coated.
3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is very tender and cooked through.
4. Shred the chicken lightly with two forks right in the slow cooker, then stir everything together so the meat is coated in the juices and sauce. Serve hot.
Variations & Tips
For picky eaters: Use a mild smoked sausage and a sweet barbecue sauce for a gentler flavor. You can also shred the chicken more finely so every bite mixes together nicely and feels a little less chunky.
Make it stretch farther: This is a wonderful recipe to spoon over rice, potatoes, or noodles when you need to feed a few extra people. If I know we want leftovers, I often make a double batch and keep the sides simple.
Add a little extra flavor: Even though the beauty of this meal is its simplicity, a sprinkle of black pepper, garlic powder, or smoked paprika can give it a little boost if you already have those in the pantry.
Use the right cut of chicken: Chicken thighs stay especially juicy in the slow cooker, but chicken breasts work well too if that is what you have on hand. Just be careful not to overcook breasts, since they can dry out faster.
Leftover idea: Leftovers reheat beautifully and can be tucked into sandwich rolls, spooned over baked potatoes, or rolled into wraps for an easy lunch the next day.
