Southern 4-Ingredient Bacon Wrapped Jalapenos
Servings: 24 pieces
Ingredients
12 fresh jalapenos, halved lengthwise and seeded
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
12 slices bacon, cut in half
Directions
1. Preheat the oven to 400°F. Line a large baking sheet or shallow tray with foil for easy cleanup.
2. Slice the jalapenos in half lengthwise and remove the seeds and membranes. If you want them a little milder, scrape out as much of the white membrane as you can.
3. In a small bowl, stir together the softened cream cheese and shredded cheddar until well combined.
4. Fill each jalapeno half with the cheese mixture, mounding it slightly but not overfilling.
5. Wrap each filled jalapeno with a half slice of bacon and place it seam-side down on the prepared baking sheet.
6. Bake for 20 to 25 minutes, or until the bacon is browned and crisp around the edges and the filling is hot and bubbly. Let them cool a few minutes before serving.
Variations & Tips
For milder poppers: If you’re feeding a crowd with mixed tastes, remove every bit of seed and membrane from the jalapenos. That’s where most of the heat lives, and it makes these much friendlier for folks who like flavor but not too much fire.
Crispier bacon tip: If your bacon is especially thick-cut, it may need a few extra minutes in the oven. You can also set the tray on a wire rack over the baking sheet so the heat circulates better and the bacon crisps up more evenly.
Cheese swap: Sharp cheddar gives these a nice southern bite, but pepper jack, Monterey Jack, or Colby work just fine too. Just keep the cream cheese in the mix so the filling stays rich and smooth.
Make-ahead tip: You can fill and wrap the jalapenos several hours ahead, cover the tray, and refrigerate until baking time. That makes them mighty handy for holidays, tailgates, and neighborhood suppers when the kitchen is already busy.
