When I want a holiday weekend meal that feels generous and comforting without keeping me tied to the kitchen, this 3-ingredient slow cooker pork picnic roast is one of my easiest go-to dinners. A bone-in picnic roast turns tender and shreddable as it cooks low and slow, and with just a simple trio of ingredients, you get rich flavor, plenty of juices, and a hearty main dish that can feed a tableful of family or friends.
This roast is wonderful served on soft buns for sandwiches, over mashed potatoes, or alongside baked beans, corn on the cob, coleslaw, macaroni salad, or a crisp green salad. For Labor Day, I especially like setting out pickles, extra sauce, and a big fruit bowl so everyone can build a plate that feels casual, filling, and perfect for a long afternoon.
3-Ingredient Slow Cooker Labor Day Winner
Servings: 8
Ingredients
1 bone-in pork picnic roast, about 6 to 8 pounds
1 large bottle barbecue sauce, about 18 ounces
1 large yellow onion, sliced
Directions
1. Spread the sliced onion across the bottom of a large slow cooker to make a bed for the roast.
2. Place the pork picnic roast on top of the onions, fat side up if possible, then pour the barbecue sauce evenly over the roast.
3. Cover and cook on low for 8 to 10 hours, or until the pork is very tender and pulls away from the bone easily.
4. Remove the bone, then shred the pork right in the slow cooker or on a large platter. Toss the meat with the cooking juices and onions so every bite stays moist and flavorful.
5. Serve hot straight from the slow cooker, on buns, or plated with your favorite holiday sides.
Variations & Tips
Make It Sweeter: If your family likes a sweeter barbecue flavor, use a honey or brown sugar style barbecue sauce. It gives the pork a stickier finish that kids often really enjoy.
Make It Tangier: A vinegar-forward barbecue sauce works beautifully if you want a less sweet, more balanced roast. This is a nice option when you plan to serve rich sides like potato salad or mac and cheese.
For Easier Shredding: Let the roast rest for about 10 to 15 minutes after cooking before removing the bone and shredding. The meat will still be hot, but just settled enough to handle more easily.
Don’t Skip the Onions: The onions help lift the roast off the base of the cooker and melt into the sauce as they cook. Even picky eaters who say they do not like onions often enjoy the flavor once everything is shredded together.
Great for Leftovers: Leftover pork keeps well in the refrigerator for up to 4 days. Tuck it into sandwiches, quesadillas, baked potatoes, or grilled cheese-style melts for easy meals after the holiday weekend.
