When I need a dependable potluck dish that feels cozy and a little special, these 4-ingredient slow cooker scalloped potatoes are one of my favorite choices. Thin-sliced Satina potatoes turn wonderfully tender while they soak up a creamy sauce, and the slow cooker does most of the work for you. It is the kind of old-fashioned comfort food that fits right in at a late-summer gathering, especially before Labor Day when everyone is ready for one more easy, crowd-pleasing meal.
Serve these potatoes alongside grilled burgers, barbecue chicken, smoked sausage, pulled pork, or baked ham. For a potluck table, I like to pair them with a crisp green salad, coleslaw, baked beans, or fresh tomato slices so the whole meal feels balanced. They also reheat beautifully, which makes them handy for leftovers the next day.
4-Ingredient Slow Cooker Pre-Labor Day Potluck Golden Bubbling Scalloped Potatoes using Thin-Sliced Satina Potatoes
Servings: 8 to 10
Ingredients
3 pounds Satina potatoes, peeled and thinly sliced
2 cans (10.5 ounces each) condensed cream of chicken soup
2 cups shredded sharp cheddar cheese, divided
1 cup whole milk
Directions
1. Lightly grease the inside of a 6-quart slow cooker. In a medium bowl, stir together the condensed cream of chicken soup, 1 1/2 cups of the shredded cheddar, and the milk until mostly smooth.
2. Arrange about one-third of the sliced potatoes in an even layer in the bottom of the slow cooker. Spoon over one-third of the sauce mixture. Repeat the layers two more times, finishing with sauce on top.
3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are fully tender. Sprinkle the remaining 1/2 cup cheddar over the top during the last 20 minutes of cooking, then cover again until melted and golden around the edges.
4. Turn off the slow cooker and let the potatoes rest, uncovered, for 10 to 15 minutes to thicken slightly. Spoon onto plates or into a serving dish and serve warm.
Variations & Tips
For extra richness: Swap the whole milk for half-and-half if you want an even creamier result. This is a nice choice for holiday meals or when you want the potatoes to feel a little more indulgent.
For picky eaters: Use mild cheddar instead of sharp cheddar for a softer cheese flavor. If your family prefers very smooth sauces, whisk the soup and milk thoroughly before adding the cheese.
For a different soup base: Cream of mushroom or cream of celery soup also works well here and can slightly change the flavor without making the recipe any harder. It is a simple pantry-friendly adjustment if that is what you have on hand.
For neat slices: If you would like the potatoes to hold together more firmly for serving, let them rest a bit longer after cooking. A 15-minute rest helps the sauce settle so each scoop comes out a little cleaner.
Slow cooker tip: Slice the potatoes as evenly as possible so they cook at the same rate. A mandoline makes this especially easy, but a sharp knife works just fine if you keep the slices thin and consistent.
