There is something mighty satisfying about a simple little party bite that looks like you fussed far more than you did, and these oven baked 4-ingredient pepper jack potato medallions do exactly that. They remind me of the kind of warm, neighborly snack you’d find on a Midwestern card table beside a pot of coffee and a lot of laughter: humble potatoes dressed up with a little spice, baked until tender, then finished with bubbly cheese that gets those irresistible browned spots on top.
Serve these medallions warm as an appetizer with ranch dip, sour cream, or a spoonful of salsa on the side. They also fit right in next to burgers, baked chicken, or a bowl of chili, and for a casual gathering I like to set them out with crisp celery, pickles, and a tray of fresh vegetables so there’s a little something for everybody.
Oven Baked 4-Ingredient Pepper Jack Potato Medallions
Servings: 6
Ingredients
4 medium russet potatoes, scrubbed clean and sliced into 1/4-inch rounds
2 tablespoons olive oil
1 teaspoon seasoned salt
8 ounces pepper jack cheese, sliced or shredded
Directions
1. Preheat your oven to 400°F and line a large baking sheet with parchment paper or lightly grease it.
2. Pat the potato slices dry, then place them in a large bowl and toss with the olive oil and seasoned salt until every slice is lightly coated.
3. Arrange the potato rounds in a single layer on the prepared baking sheet so they are not overlapping.
4. Bake for 20 minutes, flip each slice, and bake 10 to 15 minutes more, until the potatoes are tender and the edges are turning golden.
5. Top each potato round with a small piece or pinch of pepper jack cheese and return the pan to the oven for 3 to 5 minutes, just until the cheese is melted and starting to brown in spots.
6. Transfer to a serving plate and serve hot while the cheese is still gooey and the edges of the potatoes are crisp.
Variations & Tips
Use Yukon golds: If you want a creamier bite and a little more buttery flavor, Yukon gold potatoes are lovely here. They hold their shape nicely and make a softer-centered medallion.
Make them a little hotter: For folks who like more zip, add a light sprinkle of chili powder or crushed red pepper along with the seasoned salt. Pepper jack has a gentle warmth, but a little extra spice wakes everything up.
Keep the slices even: Try to cut the potatoes the same thickness so they bake at the same rate. About 1/4 inch is just right for a tender middle and crisp edges without waiting all evening.
Don’t crowd the pan: Give the medallions some breathing room on the baking sheet. If they overlap, they tend to steam instead of roast, and you’ll miss out on those golden edges that make them so good.
Prep ahead: You can bake the potatoes ahead of time, then top with cheese and finish the last few minutes in the oven just before serving. That makes them especially handy for game nights, bridge club, and family get-togethers.
