There is something mighty satisfying about a supper that feels like camp cooking and Sunday dinner all at once, and these slow cooker 4-ingredient beef and bacon foil packets do just that. It is the kind of practical little trick folks pass around at family reunions and church potlucks, especially in the Midwest where we know how to make a hearty meal with very little fuss. Wrapping everything up in foil keeps the beef tender, lets the bacon flavor seep down into every bite, and gives you those mysterious silver parcels that make everybody at the table curious to peek inside.
These packets are rich and savory, so I like to serve them with simple sides that soak up all those good juices, such as mashed potatoes, buttered egg noodles, or plain white rice. A mess of green beans, sweet corn, or a crisp cucumber salad balances the meal nicely, and if you are feeding hungry folks on a summer evening, a basket of warm rolls on the side will make it feel plenty complete.
Slow Cooker 4-Ingredient Beef and Bacon Foil Packets
Servings: 4
Ingredients
1 1/2 pounds beef stew meat
8 slices bacon
1 medium yellow onion, sliced
1 packet (1 ounce) dry onion soup mix
Directions
1. Tear off 4 large sheets of heavy-duty aluminum foil and set them on the counter. Divide the beef evenly among the sheets, then top each portion with sliced onion and sprinkle each packet with dry onion soup mix.
2. Lay 2 slices of bacon over the top of each mound. Fold the foil up and over the filling, then seal the edges tightly so the juices stay inside while cooking.
3. Place the packets seam-side up in a black slow cooker. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the beef is tender and fully cooked.
4. Carefully remove the packets from the slow cooker and let them rest for 5 minutes. Open them cautiously to avoid the hot steam, then spoon a little of the juices from inside over the beef before serving.
Variations & Tips
Add potatoes: If you want this to be more of a full meal in one packet, tuck a small handful of thinly sliced potatoes under the beef in each foil parcel. Keep the slices thin so they have time to soften properly in the slow cooker.
Use the right foil: Heavy-duty foil is your best friend here. Regular foil can work in a pinch, but I recommend doubling it so the packets do not tear when you lift them out and all those flavorful juices stay where they belong.
Try mushrooms: A handful of sliced mushrooms added with the onions makes these packets feel a little more old-fashioned supper-club style. They cook down beautifully and stretch the juices into a richer sauce.
Make cleanup easy: Set the packets in the cooker in a single snug layer if you can, and use tongs plus a sturdy spatula to lift them out. That little bit of care keeps the packets intact and saves you from chasing hot juices around the crock.
