Ingredients
1 boneless pork loin roast, about 2 1/2 to 3 pounds
1 packet dry onion soup mix, about 1 ounce
1 cup chicken broth
1/2 cup barbecue sauce
Directions
1. Place the boneless pork loin roast in the bottom of the slow cooker.
2. Sprinkle the dry onion soup mix evenly over the top of the pork roast.
3. Pour the chicken broth and barbecue sauce over the roast.
4. Cover and cook on low for 6 to 8 hours or on high for 3 1/2 to 4 1/2 hours, until the pork is tender and reaches a safe internal temperature.
5. Transfer the pork to a cutting board, let it rest for 5 to 10 minutes, then slice and serve with the cooking juices spooned over the top.
