This slow cooker cheesy bean beef dip is the kind of back-pocket recipe that saves the day when you need something warm, filling, and crowd-pleasing without a lot of prep. It leans on just a handful of simple ingredients, with refried beans, beef, and melty cheese turning into a rich, scoopable dip that feels right at home for game day, movie night, potlucks, or an easy family snack supper.
Serve this dip hot with sturdy tortilla chips, corn chips, or toasted baguette slices for scooping. If you want to round it out into more of a meal, set out a tray with celery sticks, bell pepper strips, and a simple salad, or spoon the dip over baked potatoes, nachos, or rice for a hearty dinner shortcut.
Slow Cooker 5-Ingredient Cheesy Bean Beef Dip
Servings: 8
Ingredients
1 pound frozen ground beef
1 can (16 ounces) refried beans
1 jar (16 ounces) salsa
1 package (8 ounces) cream cheese, cubed
2 cups shredded cheddar cheese
Directions
1. Place the frozen ground beef block in the slow cooker. Scrape the refried beans over the top, then add the salsa and cubed cream cheese.
2. Cover and cook on HIGH for 3 to 4 hours or on LOW for 5 to 6 hours, breaking up the beef well once it has softened enough to stir safely. Continue cooking until the beef is fully cooked through.
3. Stir everything together until the beans, beef, salsa, and cream cheese are evenly combined. Sprinkle the shredded cheddar cheese over the top, cover, and cook for 10 to 15 minutes more until melted.
4. Stir if you like a fully blended dip, or leave the melted cheese on top for a layered look. Serve hot with chips or your favorite dippers.
Variations & Tips
For milder flavor: Use a mild salsa and a mild cheddar if you are serving little ones or anyone who prefers a gentler heat. This is an easy way to keep the dip family-friendly without changing the creamy texture.
For extra kick: Stir in a few spoonfuls of diced green chiles or use pepper jack in place of some of the cheddar. If your crowd enjoys spice, a little taco seasoning can deepen the flavor too.
For easier mixing: If your slow cooker tends to run cool, let the cream cheese sit at room temperature for 15 to 20 minutes before cubing so it melts more smoothly into the dip. Be sure to break up the beef thoroughly once it loosens so there are no large chunks left behind.
For serving a crowd: This dip holds well on the warm setting for parties. Give it a stir now and then, and if it thickens too much, add a small splash of salsa to loosen it back up.
For leftovers: Spoon leftover dip into tortillas for burritos or quesadillas the next day. It also makes a tasty topping for baked potatoes or scrambled eggs, which is one of my favorite ways to stretch it into another meal.
