Slow Cooker Dr Pepper PorkPrep Time: 5 mins
Ingredients4 tablespoons canned chipotle peppers in adobo sauce, finely chopped (with sauce)
2 cups Dr Pepper
2 tablespoons apple cider vinegar
4 garlic cloves, crushed
2 bay leaves
1 large onion, large diced
2 pounds boneless pork shoulder
2 tablespoons salt
1 tablespoon pepper
1 tablespoon smoked paprika
1 tablespoon Dijon mustard
2 cups BBQ sauce (optional)
Directions1. Add everything from chipotle to onion to a 6-quart slow cooker. Stir to combine.
2. Rub pork with salt, pepper, smoked paprika and Dijon mustard. Add to slow cooker.
3. Cover and cook on low for 8 hours, or on high for 5 hours.
4. Remove pork and shred it with a fork. Combine with cooking liquid.
Optional: Stir BBQ sauce into shredded pork or pour on top when serving. This will give your pork that extra-tangy BBQ flavor.
