Hailing from that legendary street of the same name in the heart of the French Quarter in New Orleans, bourbon chicken is a show-stopper of a dish, with its sensational fusion of Cajun, Asian and Kentucky flavors. It's not the shortest list of ingredients, but the actual preparation time is mere minutes.
Chicken thighs usually have a slightly more interesting texture and flavor than the breast, but feel free to use what you have. If you prefer the added flavor that comes from using bone-in thighs, then all the better! Whatever you choose, coming home to the aroma of bourbon chicken? That, my friends, that is a good day.

2 pounds chicken thighs, boneless, skinless
⅓ cup bourbon
⅓ cup water
7 cloves garlic, minced
¼ cup brown sugar
2 tablespoons ginger, minced into paste
4 green onions, cut into ⅓
¼ cup soy sauce
¼ cup apple cider vinegar
½ teaspoon red chili flakes
½ teaspoon pepper
In a 6-quart slow cooker, add in all the ingredients but the chicken. Mix well. Add the chicken on top of the other ingredients.
Cook on low for 5 hours.
Serve with rice and garnish with fresh green onions.
Something green and bitter is a good contrast to the rich, sweet and spicy sauce, and quickly stir-fried Chinese cabbage would work well as an accompaniment. If you do have leftovers, then the cold chicken would make a really good salad alongside some cooling cucumber and cold noodles with a sprinkle of sesame seeds.
