Slow cooker beef goulash

Ingredients2lb (910g) beef chuck or stewing meat, cut into cubes
1 16-oz box elbow macaroni
2 white onions, thinly sliced
3 garlic cloves, finely chopped
3 cups (710ml) chicken broth
1 cup (235ml) water
2 tablespoon olive oil
3 tablespoon flour
1 teaspoon white sugar
1 tablespoon caraway seeds
1 tablespoon paprika
1/2 teaspoon chili powder
1 tablespoon oregano
1 teaspoon sea salt
1/2 teaspoon pepper
2 tablespoon tomato paste
1 tablespoon Worcestershire sauce
Directions1. In a large bowl, mix together the flour, sugar, caraway seeds, paprika, chili powder, oregano, salt and pepper. Pour the beef cubes into the bowl and coat the beef in the flour and spice mixture. Heat the oil in a large skillet over medium heat and quickly brown the beef.
2. Pour into the bottom of the slow cooker and pour over the chicken broth, water, onions, garlic, tomato paste and Worcestershire sauce. Mix well with a wooden spoon.
3. Cook on high for 4-5 hours until the meat becomes tender. 30 minutes before serving, pour in the elbow macaroni, cover and continue to cook. Serve immediately with a side of crusty bread and butter.
Pro tip: If you have any on hand, add a tablespoon of balsamic vinegar to the goulash before serving for an added punch of flavor!
Pro tip: Cooking elbow macaroni in a slow cooker can lead to a starchy flavor. If you don't mind an extra pot to clean, cook the macaroni on the stove until just under done. Then add into the slow cooker and cook on low for another 10 minutes to finish cooking and soak up that wonderful flavor. If you do this method, cut the amount of water added to the slow cooker by 1/2 cup.
