This casserole can also be prepared in advance and frozen before cooking. Just double the cooking time if cooking from frozen.

3 tablespoons butter

1 tsp dried thyme

4 tablespoons all-purpose flour

1 cup milk

1 tsp salt

1 tsp fresh ground black pepper

1 cup green beans, cut to 1/2 inch pieces

1 pound boneless, skinless salmon meat, cooked and flaked

Heat the oven to 350 F. Grease a large baking or casserole dish with butter or non-stick cooking spray, and set aside.

In a medium saucepan, melt 4 tablespoons of butter over medium-high heat.

Slowly add the flour to the pan, stirring continuously, until the raw flour has cooked out and it is given a nutty brown hue, about 60 to 90 seconds.

Slowly add the milk to the pan, stirring continuously, until the sauce has started to thicken.

Add the green beans and salmon to the pan, and gently stir to combine. Wait for the edges to come up to a boil, and reduce heat to medium-low and allow the sauce to simmer until desired consistency, about 3 to 5 minutes.

Transfer the mixture into the baking dish.

Place baking dish in the oven, and allow to cook until the top and edges have become brown and the sauce is bubbling, about 25 minutes.

Once cooked, remove from the oven and allow to cool for 5 minutes.
