Ingredients- 2 pounds ground chicken
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 2 tablespoons all-purpose flour
- 1 cup chicken stock
- 2 tablespoons tomato paste
- 1 cup frozen peas
- 1 cup frozen corn kernels
- Salt and freshly ground black pepper, to taste
- 2 ½ pounds potatoes, peeled and quartered
- 4 tablespoons unsalted butter
- ½ cup milk
- 1 egg yolk
- ¾ cup grated cheddar cheese
Directions1. Preheat your oven to 400°F (200°C).
2. Simmer the potatoes in salted water until tender, about 20 minutes. Drain, and mash with butter, milk, egg yolk, and salt until smooth. Set aside.
3. Heat the olive oil in a large skillet on medium heat. Add onions, carrots, garlic, and thyme, cooking until the vegetables are soft, about 7 minutes.
4. Increase the heat to medium-high and add the ground chicken. Cook until the chicken is no longer pink, ensuring to break it apart as it cooks.
