Jalapeno Peach ChickenServings: 4 servings
Ingredients4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 large peach, pitted and sliced
2 jalapenos, seeded and finely chopped
1 small red onion, chopped
2 cloves garlic, minced
1 cup chicken broth
1 tablespoon honey
2 tablespoons white vinegar
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Directions1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium heat.
3. Add chicken to the skillet and cook until golden and no longer pink in the center, about 6 minutes per side. Remove from skillet and set aside.
4. In the same skillet, add the red onion and minced garlic. Saute until the onion becomes translucent.
