Slow Cooker Taco Meatball PastaServings: 6
Ingredients1 (16 ounce) package frozen meatballs
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
2 cups salsa
1 cup water
1 packet taco seasoning
1 cup shredded cheddar cheese
3 cups cooked pasta (such as penne or rotini)
Directions1. Place the frozen meatballs in the bottom of the slow cooker.
2. Add the drained corn and rinsed black beans over the meatballs.
3. In a bowl, combine the salsa, water, and taco seasoning. Stir until well mixed.
4. Pour the salsa mixture over the meatballs and vegetables in the slow cooker.
5. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
6. During the last 30 minutes of cooking, stir in the cooked pasta and cheddar cheese.
7. Cover again and continue cooking until everything is heated through and the cheese is melted.
