Doughnuts are amazing, but the amount of work and specialty equipment it takes to fry them up at home can seem like a waste of time and energy, especially when you can get them cheap and easy from any number of convenience stores. Well, once you’ve made these simple strawberry & cream donuts in the oven (in just 30 minutes!), you may never buy doughnuts again. Plus, they're baked instead of fried, so you can eat a second one guilt-free (and don't have to invest in or clean a deep frier).
No specialty equipment is required, for this recipe, except a donut pan, and the best part is you can make these treats exactly the way you want- double or even triple-dip them in the glaze, add sprinkles, nuts, or coconut flakes… have your cake and eat it!

Strawberries & cream donuts

30 minutes
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ cup sugar
1 egg
¼ cup sour cream
3 tablespoons milk
1 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
½ cup strawberries, diced
1 cup confectioners sugar
¼ cup strawberry jam
¼ cup heavy whipping cream
¼ teaspoon vanilla
¼ teaspoon pink gel food coloring
Preheat the oven to 400F
In a medium mixing bowl, whisk to combine the flour, baking powder, salt, and sugar.
In a small mixing bowl, combine the egg, sour cream, milk, melted butter, and vanilla extract.
Add the wet ingredients to the dry and mix until just combined. Add the diced strawberries and mix one more time.
Grease a donut pan with nonstick spray. Add the batter to a plastic bag (or piping bag) and cut off one of the corners. Pipe the batter into the donut pan until each well is about ¾ full.
Bake 8-12 minutes, or until golden brown. Set aside to cool.
While the donuts cool, combine the confectioners sugar, jam, whipping cream, vanilla extract and gel food coloring in a small bowl and whisk until fully combined.
Once the donuts are cool enough to touch, dip each in the glaze and then place on a wire rack over a piece of parchment paper to allow the glaze to set. Once set, dip each donut in the glaze one more time, and then return to the wire rack to set completely before serving.
