Cheesy creamed corn casserole

2 (8-ounce) packages cornbread mix
2 (15-ounce) cans whole kernel corn, drained
2 cups sour cream
2 sticks butter, melted
2 cups shredded cheddar cheese, divided
Heat the oven to 350 F.
In a bowl, whisk together the corn, cornbread mix, sour cream, butter and half of the cheddar cheese. Mix with a spatula or spoon to combine.
Continue mixing for another minute with a whisk attachment and an electric mixer on medium speed.
Pour the mixture into a 9-by-13 casserole dish coated with nonstick cooking spray, and make sure it's spread evenly.
Top with the remaining cheese.
Bake for 45 to 55 minutes, until the casserole is bubbly and brown on top.
Allow to sit five minutes before cutting into pieces.
