Parmesan Pasta Soup Recipe
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 8 cups chicken or vegetable broth
- 2 cups uncooked pasta (any shape will work)
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Optional veggies:
- 1 small onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté for 2-3 minutes until softened.
2. Add the carrots and celery and cook for another 5 minutes until the vegetables are slightly softened.
3. Add the broth and bring it to a boil.
4. Once boiling, add the pasta and cook for around 10-15 minutes, or until the pasta is cooked.
5. Remove the pot from the heat. Add the parmesan cheese and stir until the cheese has melted and the soup is creamy.
6. Season the soup with salt and pepper to taste.
7. Serve hot with crusty bread and enjoy!
