Eggs are a staple of breakfast meals, but sometimes you need a something you can pack up and take with you. Muffins have always worked perfectly in situations like this because they're portable, hand-held, and delicious. Well, now you can have the best of both worlds -- this muffin has a hardboiled egg nestled right inside!
Nagi, the home chef behind the blog Recipe Tin Eats discovered that sometimes experimentation can lead to wonderful results when she created these wonderful muffins!
Nagi warns not to boil the eggs before placing them in the batter, because then they will overcook. Instead, she cracked a raw egg into the muffin mix. She also adds bacon and greens into the batter to give it some extra color and flavor.
