Barbecue chicken is a staple at many backyard barbecues. But, there's no reason you can't have that chicken any night of the week. This dish from iheartrecipes only has a few ingredients, but it tastes like a gem! You'll need to get your backyard grill going to get just the right smokey flavor. (If you want to don a winter coat and hat, while you barbecue in the snow, we won't judge!)

Hickory smoked barbecue chicken

Preparation Time: About 30 minutes + 4 hours of marinating time
Total Time: 1 hour 15 minutes (plus time to marinate)
Serves: 6 to 8
Ingredients
1 pound of chicken (legs and thighs)
2 tablespoons of barbecue seasoning rub
1 1/2 tablespoons extra virgin olive oil
1 tablespoons apple cider vinegar
1 1/2 cup of your favorite bbq sauce
Don't forget:
good quality charcoal
hickory wood chips (soak them for at least 1 hour prior to using them)
Directions
1. After cleaning your chicken, place it in a bowl and add your favorite barbecue seasoning rub (you can make your own with garlic, brown sugar, chili powder, etc. or buy a rub from the store.) Make sure your chicken is completely coated.
2. Add a little olive oil and apple cider vinegar. Use your hands to make sure each piece of chicken is coated well.
3. Cover your bowl of chicken with plastic wrap and refrigerate for about 4 hours to marinate.
4. Soak your wood chips in a bowl for about an hour in water.
5. Heat up your grill. Once the charcoal is hot, add your wood chips directly on the wood, and replace the grate.
6. When the chips start smoking, place your chicken on the grill. Let your chicken cook for about 25 minutes.
7. Dab barbecue sauce on your chicken, turn, add more sauce. Repeat every 20 minutes until the chicken is cooked all the way through.
Pro tip: Keep your chicken from burning by placing it on the grill on the opposite end from the wood chips and charcoal. The indirect heat cooks the chicken and makes it a little harder to burn!
