With only easy three steps and a few garnishes, you can make this amazingly delicious chicken fajita soup in no time at all. After a few minutes of prep, you're ready to go about the rest of your day, knowing that when dinner time comes, you have something special in your slow cooker ready to go.
The flavors in this tomato-and-chicken-based soup are wonderful and so easy to achieve. The lime juice adds brightness to the soup, while jalapeno adds a bit of spice. Add a packet of taco seasoning for a blend of spices and sour cream for a touch of richness. Black beans, corn and tortilla strips add unique textures to the soup. Eight hours in the slow cooker gives you a wonderfully rich soup with a perfect balance of flavors!

Note: All slow cookers are a little bit different in temperature and calibration. This recipe was tested in Cooktop Cove's Test Kitchen using this slow cooker, which is available for purchase here.
