Tamales are one of those Mexican dishes that, unless you live in Mexico (or very close to it), few of us have ever tried. Traditionally these little bundles are made up of whatever's on hand at the time (meat, cheese, rice, even fruit!) before they're wrapped in corn dough and then wrapped once more in corn husks. Yes, with tamales, it's all about the corn!
They're a treat that those furthest away from the border don't get to indulge in too often, but there is a way. While this casserole may not be purely authentic, it will still give you all the tastes of tamales no matter where you live. Chicken is combined with beans, corn, and taco sauce and it all sits between two layers of corn tortillas. I've added some feta into mine too, as it's the closest thing to Queso Blanco, but it's not necessary - just an added bonus!

Other great cheeses to include are Monterey Jack or cheddar!
