Even when I was a really picky eater, I loved clam chowder. It's so warm, creamy, and comforting. Now that I'm on this low-carb, keto diet, I'm wondering: is it possible to make a healthy chowder? It's so rich, it seems impossible that you could transform something that good into something low carb. I've been desperate for a comforting soup on these chilly nights, so luckily the recipe below really delivers!
There's no need for potatoes in this chowder when you use the oh-so-versatile cauliflower. It picks up the flavor of the bacon and the cream just as well as potatoes, I might never go back to the "traditional" method again! I like to top this chowder with cheddar cheese. It seems to meld especially well with the cauliflower flavor.
