But how about you? Are you eating your spinach? Maybe you're blending up your greens in a smooth or serving them up in your lunch salads...but those methods can grow old fast. And if you're on a low-carb diet, you probably find it challenging to find healthy spinach recipes that taste good and are low on the carbohydrates.
We've rounded up some satisfying and tasty spinach-based treats for you to try out so you, too, can be more like Popeye than Wimpy.
1. Spinach artichoke squares (h/t From A Chef's Kitchen)
Ever wish you could just sit with a bowl of chips and eat dip for dinner? You know that's not smartest move for your health, but From A Chef's Kitchen is trying to help you where they can! This recipe takes your favorite spinach-artichoke dip, removes some carbs, keeps the flavor, and turns it into small bites perfect for serving at cocktail hour (or large squares for dinner!)
2. Crustless bacon, spinach, and Swiss quiche (h/t Genius Kitchen)
Bacon and Swiss is the traditional filling for a quiche Lorraine, but there's not much-saving grace health-wise between the crusty and the lack of veggies. Genius Kitchen to the rescue! This recipe deletes the crust and amps up the nutrition (as well as the flavor) by adding tomatoes and spinach. Brunch, here you come!

This dish looks impressive enough to serve to guests, but it's practical, too, so you can put it together in just thirty minutes after work for a weeknight delight.
4. Prosciutto-wrapped cod with lemon caper spinach (h/t Kit's Coastal)
What a great way to include more fish in your diet! Between the lemons, spinach, and cod, this meal is packed with nutrition. The total cooking time is less than 12 minutes--and that includes the sauce! (Do allow about 30 minutes ahead of time to allow fish fillets to come to room temperature.)
5. Spinach balls for St. Patty's Day (h/t GG is Wheat Free)
The title says these are for March 17, but you can whip these up any time of year. These are the ideal little nuggets to bring to a party or to add to a potluck buffer.
6. Cheesy creamed spinach (h/t Low Carb Yum)
We'll confess that the words "cheesy" and "creamed" don't necessarily conjure up the image of a healthy diet, but ah, you've got to splurge every now and again and at least this dish is still low-carb! The blogger says you can eat this as is or pour into a casserole, top with crushed pork rinds, and reheat.
