It's no surprise that the Irish love potatoes, and they have dozens of ways of preparing them. One simple option is boxty: a potato cake made from a combination of mashed and raw, grated potato. In the recipe below, the spuds are combined with buttermilk for a richly flavored potato pancake that couldn't be more versatile.
While boxty can certainly be eaten on its own, it's excellent as part of a full Irish breakfast. Consider serving these pancakes alongside fried or poached eggs, fried bacon, and beans. You can also serve them more simply with just a dollop of sour cream and some freshly chopped herbs or green onions. However you serve them, they're sure to be a crowd-pleaser.

1 cup mashed potatoes
1 ½ cups grated, raw potato
2 cups flour
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk
butter, for frying
Combine the mashed potatoes and raw potato in a bowl. Add the flour, baking powder, and salt, and mix to combine. Add the buttermilk, stirring until just combined.
Heat the butter in a skillet set over medium heat. Scoop out about a half-cup of boxty batter, and drop into the pan, like a pancake. Cook about 3-4 minutes per side, until golden brown.
