Meatloaf with Mashed Potatoes and Cheese is a classic comfort food that has stood the test of time. The origins of meatloaf can be traced back to Europe, with variations of the dish existing in several cultures. However, it was the Americans who perfected it during the 19th century, transforming meatloaf into the beloved dish it is today. Typically made with ground meat mixed with other ingredients and then baked, meatloaf is known for being both hearty and filling. When topped with creamy mashed potatoes and melted cheese, it becomes an irresistible combination that's perfect for any family dinner, especially during colder months when you crave something to warm you up from the inside out.
When it comes to serving Meatloaf with Mashed Potatoes and Cheese, you have a number of delicious options to complement the main dish. A side of steamed green vegetables like broccoli, green beans, or Brussels sprouts can add a touch of freshness and color to the meal. For something with a bit of tang, consider a crisp salad dressed with a vinaigrette. And if you're looking for that perfect finishing touch, a glass of red wine or a cold beer can pair splendidly with the rich flavors of the meatloaf.
Recipe: Meatloaf with Mashed Potatoes and Cheese
Ingredients:
- 1 1/2 pounds ground beef
- 1 egg
- 1 onion, chopped
- 1 cup milk
- 1 cup dried bread crumbs
- Salt and pepper to taste
- 2 pounds potatoes, peeled and quartered
- 1/4 cup butter
- 1/2 cup milk
- 1 cup shredded cheddar cheese
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. In a large bowl, combine the ground beef, egg, onion, milk, bread crumbs, salt, and pepper. Place the mixture into a lightly greased 5x9 inch loaf pan, or form it into a loaf and place it in a lightly greased 9x13 inch baking dish.
3. Bake the meatloaf in the preheated oven for 1 hour.
4. While the meatloaf is baking, make the mashed potatoes. Place the quartered potatoes into a large pot and cover with salted water. Bring to a boil and cook until tender, about 15 minutes. Drain the potatoes and return them to the pot.
5. Add butter and 1/2 cup milk to the potatoes and mash until smooth, creamy, and well-mixed. Add salt and pepper to taste.
6. Once the meatloaf is done, carefully drain any excess fat from the loaf pan or dish. Spread the mashed potatoes over the meatloaf evenly.
7. Sprinkle the shredded cheddar cheese over the top of the mashed potatoes.
8. Place the meatloaf back in the oven and bake for another 15 minutes, or until the cheese is melted and lightly browned.
9. Let stand for a few minutes before slicing. Serve hot and enjoy!
