This low carb beef and pepper cheesy bake is a go-to recipe for those busy weeknights when you want something comforting yet healthy. Growing up in the Midwest, casseroles were a staple in our household, and this dish is my low-carb twist on a classic favorite. It's perfect for anyone looking to cut down on carbs without sacrificing flavor. The combination of savory ground beef, vibrant bell peppers, and a golden layer of melted cheese makes it a crowd-pleaser, even for those who aren't watching their carb intake.
This dish pairs wonderfully with a simple green salad drizzled with olive oil and balsamic vinegar. For a bit more substance, you can serve it alongside some roasted vegetables like asparagus or broccoli. If you're not strictly low-carb, a slice of crusty bread would be perfect to soak up any delicious juices from the bake.
Low Carb Beef and Pepper Cheesy Bake
Servings: 4

Ingredients
1 lb ground beef
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons olive oil
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
Stir in the sliced red and green bell peppers, salt, black pepper, and Italian seasoning. Cook for another 5 minutes until the peppers are slightly tender.
Divide the beef and pepper mixture evenly into two individual-sized aluminum foil pans.
Top each pan with an even layer of shredded cheddar and mozzarella cheese.
Place the pans on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
Remove from the oven and let cool slightly before serving.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes or some chopped jalapeños to the beef mixture. You can also swap out the ground beef for ground turkey or chicken for a lighter option. If you prefer a different cheese, try using Monterey Jack or pepper jack for a bit of a kick. For added texture, sprinkle some crushed pork rinds on top before baking to create a crispy crust.
