Oven-baked cheesy broccoli and rice casserole is a timeless dish that combines the comforting flavors of melty cheese, tender broccoli, and fluffy rice into a harmonious and satisfying meal. This casserole has roots in American home cooking, often serving as a reliable potluck favorite or a hearty family dinner. Its appeal lies in its simplicity and versatility, making it an ideal choice for those who seek a nourishing dish with minimal fuss. The combination of broccoli and cheese is a classic pairing that provides both nutritional benefits and a rich, savory taste. This dish is perfect for any occasion, from a casual weeknight meal to a cozy Sunday dinner.
This casserole pairs beautifully with a crisp green salad dressed with a light vinaigrette, which adds a refreshing contrast to the richness of the cheese. For additional protein, consider serving it alongside grilled or roasted chicken. If you're looking to keep it vegetarian, roasted mushrooms or a medley of sautéed vegetables can complement the flavors well. A chilled glass of white wine or a light beer can also enhance the dining experience, making it a well-rounded meal.
Oven-Baked Cheesy Broccoli and Rice Casserole
Servings: 6

Ingredients
2 cups broccoli florets
2 cups cooked white rice
1 1/2 cups shredded cheddar cheese
1 cup milk
1/2 cup sour cream
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Directions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, melt the butter and add the olive oil. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
Add the broccoli florets to the skillet and cook for an additional 5 minutes, until they are bright green and slightly tender.
In a large mixing bowl, combine the cooked rice, sautéed vegetables, 1 cup of cheddar cheese, milk, sour cream, salt, pepper, and paprika. Stir until well mixed.
Transfer the mixture into a greased 9x13-inch casserole dish, spreading it evenly.
Sprinkle the remaining 1/2 cup of cheddar cheese and the Parmesan cheese over the top.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Variations & Tips
For a healthier twist, you can use brown rice instead of white rice or substitute Greek yogurt for sour cream to reduce the fat content. To add more depth of flavor, consider including a pinch of nutmeg or cayenne pepper. If you want to make it a complete one-dish meal, add cooked shredded chicken or crumbled bacon for extra protein. For a gluten-free version, ensure that all the ingredients, particularly the sour cream and cheeses, are certified gluten-free.
