Back when my kids were running in and out of the house between chores and ball practice, I learned pretty quickly that the slow cooker could be a mother’s best friend. This 6-Ingredient Slow Cooker Chicken & Cream Cheese reminds me of those busy seasons, but with a fun little modern twist thanks to everything bagel seasoning. It’s the same kind of cozy, creamy chicken we’ve been making in the Midwest for generations—simple pantry staples, nothing fussy—but that garlicky, seedy seasoning gives it a playful nudge into today’s flavors. You might want to make this on a day when you’re out in the yard, working in the garden, or just don’t feel like fussing over the stove. You toss everything in, let it quietly bubble away, and by suppertime you’ve got tender, shredded chicken in a velvety sauce that tastes like it took all afternoon, even though the slow cooker did the work.
This chicken is wonderfully versatile, the kind of dish that fits right into a traditional Midwestern table. Spoon it over a bed of fluffy mashed potatoes or buttered egg noodles when you want something stick-to-your-ribs hearty. It’s also lovely piled onto toasted buns or split biscuits, almost like a warm, creamy chicken sandwich filling—perfect for feeding a crowd. Add a simple side of green beans, steamed broccoli, or a crisp lettuce salad with sliced tomatoes to brighten the plate. If you’ve got time, a pan of roasted carrots or sweet corn, and maybe a few dill pickles from the cellar, will round out the meal just like we’ve done on farm tables for years.
6-Ingredient Slow Cooker Chicken & Cream Cheese with Everything Bagel Seasoning
Servings: 6

Ingredients
2 pounds boneless, skinless chicken breasts (or thighs)
1 (8-ounce) block cream cheese, softened
1 (10.5-ounce) can cream of chicken soup
1/2 cup chicken broth (or water)
2–3 tablespoons everything bagel seasoning, divided
1 teaspoon garlic powder (optional, for extra flavor)
Salt and black pepper, to taste
Directions
Lightly grease the inside of your slow cooker with a bit of oil or cooking spray to help with cleanup.
Place the chicken breasts (or thighs) in a single layer on the bottom of the slow cooker.
In a medium bowl, whisk together the cream of chicken soup, chicken broth, 1–2 tablespoons of everything bagel seasoning, garlic powder (if using), and a pinch of black pepper until fairly smooth.
Pour the soup mixture evenly over the chicken, making sure the pieces are mostly covered.
Cut the cream cheese into a few large cubes and scatter them over the top of the chicken and sauce.
Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, or until the chicken is very tender and easily shreds with a fork.
Once cooked, remove the lid and use two forks to shred the chicken directly in the slow cooker, stirring it into the creamy sauce until everything is well combined.
Taste and adjust seasoning with additional salt, pepper, and more everything bagel seasoning if you’d like a stronger flavor.
Sprinkle the remaining everything bagel seasoning over the top as a garnish just before serving.
Serve hot over mashed potatoes, noodles, rice, or on toasted buns.
Variations & Tips
If you grew up in a house where nothing went to waste, you’ll appreciate how flexible this recipe is. You can easily swap in boneless, skinless chicken thighs for a richer, more old-fashioned flavor and extra tenderness. If you don’t keep cream of chicken soup on hand, cream of mushroom or even cream of celery will work in a pinch, each giving the sauce its own character. For a bit of color and sweetness, stir in a cup of frozen peas and carrots or corn during the last 30 minutes of cooking—just like the casseroles many of us grew up with. If you prefer a lighter dish, use reduced-fat cream cheese and thin the sauce with a bit more broth, then serve the chicken over steamed vegetables or cauliflower rice instead of potatoes or noodles. You can also add a handful of shredded cheddar at the end for a cheesier, more indulgent version that feels like a warm church potluck casserole. For those who like a little kick, a pinch of red pepper flakes or a dash of hot sauce stirred in at the end will wake things up nicely. And if you find the everything bagel seasoning too salty, simply cut back on it and add extra garlic powder and a sprinkle of dried onion to keep that savory, comforting flavor without overpowering the dish.
