This slow cooker 3-ingredient creamy queso chicken is the kind of cozy, low-effort dinner that saves the day when everybody is hungry and you need something dependable, filling, and extra comforting. Chicken cooks low and slow until tender, then gets mixed into a rich queso-style sauce with tomatoes and green chilies for a meal that feels a little indulgent without asking much from the cook. It is especially handy for busy weeknights, game days, or casual family dinners when you want big flavor from a very short ingredient list.
Serve this creamy queso chicken over rice, spooned onto baked potatoes, tucked into warm tortillas, or piled onto toasted sandwich buns. I also like setting out simple sides like black beans, corn, a crisp green salad, tortilla chips, or steamed broccoli so everyone can build a plate the way they like it. A little chopped cilantro, sliced green onion, or diced avocado on top makes it feel even more special.

1. Place the chicken breasts in the bottom of the slow cooker in an even layer.
2. Pour the queso dip over the chicken, then add the diced tomatoes with green chilies and their juices on top.
3. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is fully cooked and tender.

5. Serve warm over rice, in tortillas, on buns, or however your family likes it best.
Variations & Tips
For taco night: Spoon the creamy chicken into warm flour or corn tortillas and set out toppings like shredded lettuce, diced onion, cilantro, and crushed tortilla chips so everyone can make their own tacos.
For picky eaters: Use a very mild queso and mild tomatoes with green chilies for the gentlest flavor. If someone in the family is sensitive to bits of tomato, stir the sauce well after shredding so everything blends together more smoothly.
For a heartier meal: Serve it over rice, egg noodles, or baked potatoes to stretch the recipe a little further. This is one of my favorite tricks when feeding extra people or hungry teenagers.
To adjust the texture: If the sauce seems thinner than you like, leave the lid off for 10 to 15 minutes after shredding so it can thicken slightly. If it feels too thick, stir in a small splash of milk.
Storage tip: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop, adding a spoonful of milk if needed to loosen the sauce.
