This slow cooker 4-ingredient tater tot beef bake is the kind of back-pocket dinner that saves busy weeknights when cooking energy is low but everyone still wants something warm and filling. It leans into classic Midwestern comfort food with simple freezer and pantry staples, and the beauty of it is how little thought it takes: layer everything in the slow cooker, let it do the work, and come back to a hearty, casserole-style meal.

Serve this with a simple green salad, steamed green beans, or roasted broccoli to balance the richness. If you want to stretch the meal a little further, spoon it alongside buttered corn, fruit salad, or even a small bowl of tomato soup for an extra cozy dinner.

Ingredients

1 (32-ounce) bag frozen tater tots

1 (1-pound) tube frozen ground beef
1 (10.5-ounce) can condensed cream of mushroom soup
2 cups shredded cheddar cheese

Directions

1. Lightly coat the inside of a 6-quart slow cooker with nonstick spray or a thin layer of oil. Place the frozen tube of ground beef in the bottom of the slow cooker.

2. Spoon the condensed cream of mushroom soup over the beef tube, spreading it as evenly as you can over the top and around the sides.

3. Sprinkle 1 cup of the shredded cheddar cheese over the soup-covered beef, then dump the frozen tater tots evenly over the top.

4. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 1/2 to 4 1/2 hours, until the beef is fully cooked through and can be broken apart easily. In the last 20 minutes, break up the beef into crumbles and stir some of it into the sauce beneath the tots if desired.

5. Sprinkle the remaining 1 cup of cheddar cheese over the top, cover for 10 to 15 minutes until melted, then scoop and serve hot.

Variations & Tips

Swap the soup: Cream of chicken or cheddar soup both work well here if that is what you already have in the pantry. It is an easy way to slightly change the flavor without changing the method.

Add vegetables: For a more complete one-pot meal, add a layer of frozen mixed vegetables or frozen green beans between the soup and tater tots. This is one of my favorite ways to make dinner feel a little more rounded on a busy night.

For crispier tots: Tater tots stay softer in the slow cooker than they would in the oven. If you want a crisp finish, transfer the cooked casserole to an oven-safe baking dish, top with the final cheese, and broil for a few minutes before serving.

Make-ahead note: This recipe is best for days when you can start it earlier and let it cook hands-off. If your ground beef tube is very large or extra thick, check that the center is fully cooked before serving and break it up well once it has softened.
