This 4-ingredient oven baked jalapeno tuna is the kind of budget-friendly, no-fuss supper that saves the day when the fridge looks a little bare but everyone is still hungry. Using undrained cans of jalapeno tuna gives the dish plenty of flavor right from the start, and baking it with just a few simple refrigerator staples turns it into a warm, comforting meal with a little kick that is especially nice on busy summer evenings.
Serve this baked tuna with buttered rice, roasted potatoes, toast, crackers, or a simple green salad to round out the meal. It also works well spooned over cooked noodles or tucked into toasted sandwich rolls if you want to stretch it for a heartier family supper.

Directions
1. Preheat the oven to 375 degrees Fahrenheit and lightly grease a medium casserole dish.

3. Stir in 1 cup of the shredded cheddar cheese and half of the sliced green onions.

5. Bake for 20 to 25 minutes, until hot and bubbly and the cheese is melted. Sprinkle the remaining green onions on top before serving.
Variations & Tips
Milder Family Version: If your family prefers less heat, use jalapeno tuna but add a little extra cream cheese or cheddar to soften the spicy bite without losing flavor.
Crunchy Top Tip: For a little texture, scatter a small handful of crushed buttery crackers over the cheese before baking. It gives the top a nice golden finish that children and adults both tend to enjoy.
Make It a Meal: To stretch this dish, spoon it over cooked rice, pasta, or baked potatoes. That is one of my favorite ways to make a simple pantry supper feel a little more filling.
Make-Ahead Tip: You can mix everything together earlier in the day, cover the dish, and refrigerate it until dinnertime. When baking straight from the refrigerator, add a few extra minutes so the center gets fully hot.
