When I want dinner to feel hearty without giving up a whole summer afternoon in the kitchen, this 5-Ingredient Slow Cooker Summer Sizzle is one of my easiest go-to meals. Using raw bratwurst links, onions, and a simple sweet-savory sauce, it cooks low and slow until everything is rich, tender, and full of backyard-dinner flavor. It has that classic Midwestern comfort-food feel, but the slow cooker does the heavy lifting so you can get it started early and forget about it until supper.

This dish is especially good with buttery mashed potatoes, egg noodles, or toasted hoagie rolls to catch all that glossy sauce. For something lighter, serve it with crisp coleslaw, corn on the cob, or a simple cucumber salad. If you're eating outside on the porch or patio, a cold lemonade, iced tea, or light lager fits right in.

Ingredients

2 pounds raw bratwurst links

2 large yellow onions, sliced
1 cup barbecue sauce
1 cup beer or apple juice
2 tablespoons brown sugar

Directions

1. Layer the sliced onions in the bottom of the slow cooker to create a bed for the bratwurst.

2. Place the raw bratwurst links over the onions in an even layer.

3. In a small bowl or measuring cup, stir together the barbecue sauce, beer or apple juice, and brown sugar until smooth.

4. Pour the sauce mixture over the bratwurst, cover, and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the bratwurst are fully cooked and the onions are soft.

5. If you want a thicker glaze, remove the lid for the last 30 minutes of cooking. Turn the bratwurst in the sauce before serving so they are well coated.

6. Serve hot straight from the slow cooker with your favorite sides or pile the bratwurst onto rolls with onions and extra sauce.

Variations & Tips

Use apple juice instead of beer: If you prefer not to cook with beer, apple juice works beautifully and gives the sauce a slightly sweeter finish that pairs really well with bratwurst and onions.

Try a sandwich version: Tuck the cooked bratwurst into toasted hoagie rolls and spoon the soft onions and sauce over the top. This is my favorite way to serve it when we want a no-fuss porch dinner with minimal cleanup.

Brown first for extra flavor: If you have 10 extra minutes before work or before the day gets busy, quickly brown the bratwurst in a skillet before adding them to the slow cooker. It is optional, but it adds deeper color and a more grilled-style flavor.

Make cleanup easier: A slow cooker liner can be a lifesaver on busy weekdays. Since the sauce gets sticky and caramelized around the edges, this small shortcut makes washing up much faster later on.

Check doneness: Raw bratwurst should be fully cooked before serving. If you like to double-check, the internal temperature should reach 160°F in the center of the links.
