When I need an easy summer dessert that can quietly take care of itself while I work through the rest of the day, this 3-ingredient slow cooker bake is one of my favorite low-effort options. It lands somewhere between a cobbler and a warm pudding cake, with a soft golden-yellow and white, sponge-like texture that soaks up its own sweet glaze as it cooks. Recipes like this are especially handy for potlucks, family dinners, or those hot days when turning on the oven feels like too much.

Serve this warm in bowls with vanilla ice cream, lightly sweetened whipped cream, or a spoonful of plain Greek yogurt if you want to balance the sweetness. Fresh summer berries, sliced peaches, or even a little dusting of powdered sugar make it feel extra special, and coffee or iced tea pair nicely if you’re putting it out after dinner.

Ingredients

1 box yellow cake mix (about 15.25 ounces)

1 can lemon-lime soda (12 ounces)
1 can lemon pie filling (about 21 ounces)

Directions

1. Lightly coat the inside of your slow cooker with nonstick spray or a thin layer of butter to help prevent sticking around the edges.

2. Spread the lemon pie filling evenly across the bottom of the slow cooker.

3. In a medium bowl, stir the yellow cake mix and lemon-lime soda together just until combined. The batter will be light, airy, and a little foamy.

4. Spoon the batter over the pie filling and gently spread it into an even layer. Do not overmix the layers together.

5. Cover and cook on High for 2 to 2 1/2 hours, or until the top looks set and the dessert is puffed, porous, and golden-yellow with glossy spots of glaze showing through.

6. Turn off the slow cooker and let the dessert rest uncovered for 10 to 15 minutes before serving so the texture can settle slightly. Scoop into bowls and serve warm.

Variations & Tips

Berry version: Swap the lemon pie filling for blueberry or strawberry pie filling for a different summer flavor while keeping the same easy method. The texture stays soft and spoonable, but the color and sweetness shift in a fun way.

Citrus boost: Add a little fresh lemon zest to the batter if you want a brighter, more pronounced citrus flavor. It’s a small extra step that makes the dessert taste a little more homemade.

Keep it from getting soggy: Slow cookers can vary a lot, so start checking near the 2-hour mark. If the top is set but condensation is heavy, place a clean kitchen towel under the lid for the last 15 minutes to catch extra moisture.

Make-ahead serving tip: This is a great dessert to prep for busy evenings because it stays warm for a bit after cooking. I like to have toppings ready in the fridge so all that’s left is scooping and serving.
