When I know the evening is going to be full, this is the kind of dinner I set up early and forget about until the house starts smelling amazing. With just four ingredients and the slow cooker doing all the work, you get a rich, saucy shredded protein that feels like a real meal without heating up the kitchen. It is especially perfect in summer when turning on the oven sounds like the last thing anyone wants to do.

This slow-cooked dish is great spooned over rice, piled onto soft sandwich buns, or tucked into warm tortillas with a crunchy slaw. For easy sides, I like simple corn on the cob, a chilled cucumber salad, potato salad, or sliced watermelon to keep the meal relaxed and summer-friendly.

Ingredients

3 to 4 pounds boneless pork shoulder

1 cup barbecue sauce
1/2 cup Italian dressing
2 tablespoons brown sugar

Directions

1. Place the pork shoulder in the slow cooker.

2. In a small bowl, stir together the barbecue sauce, Italian dressing, and brown sugar until smooth, then pour the mixture over the pork.

3. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours, until the meat is very tender and easily pulls apart with a fork.

4. Shred the pork directly in the slow cooker, stir it into the sauce, and serve warm.

Variations & Tips

Make It Sandwiches: Pile the shredded meat onto soft buns and top with coleslaw for an easy backyard-style dinner. This is my favorite way to stretch the meal for casual summer evenings.

Keep It Freezer-Friendly: Let the cooked shredded meat cool completely, then pack it with some of the sauce in freezer containers. It reheats well for future sandwiches, rice bowls, or wraps.

Use A Liner Or Spray: If your slow cooker tends to hold onto sticky sauces, a slow cooker liner or a light coat of cooking spray makes cleanup much easier after a long workday.

Adjust The Sweetness: If your barbecue sauce is already quite sweet, reduce the brown sugar slightly. If you like a deeper molasses flavor, dark brown sugar works especially well here.
