When I want dinner handled before the hottest part of the day, this super-simple slow cooker recipe is exactly the kind of thing I reach for. With just three ingredients, it leans on time more than effort, giving you a tender, savory shredded protein in a rich sauce that feels like you cooked all day without having to stand over the stove. It is the sort of low-stress summer dinner that works beautifully for busy weekdays, casual weekend meals, and make-ahead lunches.
Serve this over rice, mashed potatoes, buttered noodles, or soft sandwich rolls to soak up every bit of the dark, glossy cooking liquid. For lighter sides, pair it with simple corn on the cob, a vinegar-based slaw, green beans, or a crisp cucumber salad so the meal stays easy and balanced.
3-Ingredient Slow Cooker Late July Simplicity
Servings: 6
Ingredients
3 to 4 pounds unidentifiable slow-roast-friendly protein roast
Directions
1. Place the sliced onion in the bottom of the slow cooker to form a bed for the protein.
2. Set the protein on top of the onions, then pour the dark amber savory sauce evenly over it.
3. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the protein is very tender and pulls apart easily with two forks.
4. Shred or break up the protein directly in the slow cooker and toss it well with the cooking juices before serving.
Variations & Tips
Sandwich Night: Pile the shredded protein onto soft buns and spoon a little extra sauce over the top. Add crunchy slaw or pickle slices if you want a little contrast without adding much work.
Meal Prep Bowls: Portion the shredded protein with rice or roasted potatoes into containers for easy lunches during the week. The flavor gets even better after a night in the fridge, which makes this especially handy on busy workweeks.
Sauce Control: If the finished mixture seems thinner than you like, remove the lid for the last 20 to 30 minutes of cooking so some of the liquid can reduce slightly. If it gets too concentrated, stir in a splash of water before serving.
Freezer Tip: Let the shredded protein cool completely, then pack it with some of the sauce in freezer-safe containers. It reheats well for a future no-fuss dinner, which is one of my favorite ways to stay ahead when the week gets hectic.
