This 4-ingredient slow cooker chicken is the kind of low-effort dinner that saves the day when work runs late and you still want something warm and inviting on the table. The sweet bright yellow fruit chunks paired with tender chicken create that classic sweet-and-savory combination people always go back for, and it feels especially fitting for a casual Friendship Day meal where easy sharing and comforting flavors matter most.

Serve this over fluffy white rice, brown rice, or buttery egg noodles to soak up the sweet cooking juices. It also pairs well with steamed green beans, roasted broccoli, a simple garden salad, or soft dinner rolls, especially if you want to round it out into a more generous buffet-style spread for friends and family.

4. Gently shred the chicken into large pieces right in the slow cooker or leave the cutlets whole if you prefer. Stir everything together so the chicken is coated in the sauce.

5. Serve hot over rice or noodles, spooning the pineapple and sauce over each portion.

Variations & Tips

Use chicken breasts or thighs: If frozen chicken cutlets are what you have, they work beautifully, but boneless skinless chicken breasts or thighs can be swapped in with similar timing. Just make sure the chicken reaches a safe internal temperature before serving.

Make it less sweet: For a more savory version, use an unsweetened or less-sweet barbecue sauce, or drain part of the pineapple juice before adding it. This keeps the sauce from becoming too fruity while still giving the dish plenty of flavor.

Serve for a crowd: This is an easy potluck-style main dish because it stays warm in the slow cooker. If I'm balancing a busy day and having people over, I like to set out rice, rolls, and a green vegetable so everyone can build a plate without extra last-minute cooking.

Thicken the sauce: If you want a thicker finish, remove the lid for the last 20 to 30 minutes of cooking, or transfer the sauce to a saucepan and simmer it briefly after the chicken is done. It makes the final dish feel a little more polished with almost no extra effort.
