These little jalapeno bacon bombs are the kind of simple grill snack that disappears before the burgers even make it to the table. Around here, recipes like this were made for summer evenings, folding tables in the yard, and feeding whoever happened to wander over once they caught that good smoky smell. With just three ingredients, they bring together the old reliable Midwestern love of bacon, a little heat from fresh jalapenos, and creamy cheese tucked inside for a hearty, low carb bite.

Serve these hot off the grill with burgers, grilled chicken, bratwurst, or a big platter of fresh vegetables and dip. They also fit nicely alongside a crisp coleslaw, deviled eggs, or a simple ranch dressing for dipping if you want to cool down the heat a touch. For a party spread, set them out with pickles, cheese cubes, and smoked sausage for an easy backyard appetizer table.

Ingredients

8 fresh jalapenos, halved lengthwise and seeded

8 ounces cream cheese, softened
16 slices bacon

Directions

1. Preheat a grill to medium heat. If you like, line a grill-safe tray or a sheet of heavy-duty foil with a few small holes poked in it for easier handling.

2. Slice the jalapenos in half lengthwise and remove the seeds and membranes. Wear gloves if your skin is sensitive to peppers.

3. Fill each jalapeno half with softened cream cheese, mounding it just slightly so it stays tucked inside.

4. Wrap each filled jalapeno half with one slice of bacon, overlapping the ends underneath so the bacon stays in place.

5. Place the bacon-wrapped jalapenos on the grill or on the foil tray over the grill. Cook for 20 to 25 minutes, turning as needed, until the bacon is crisp and browned and the peppers are tender.

6. Remove from the grill and let them rest for 5 minutes before serving, as the filling will be very hot. Serve warm.

Variations & Tips

For milder heat: Be thorough about removing all the seeds and white membranes from the jalapenos. That is where most of the heat lives, and taking it out gives you a gentler bite without losing that fresh pepper flavor.

Choose the right bacon: Regular-cut bacon usually works better than thick-cut here because it crisps more easily by the time the peppers turn tender. If you only have thick-cut bacon, cook a bit longer over steadier heat.

Keep the filling in place: Don’t overstuff the jalapenos. A modest spoonful of cream cheese in each half helps prevent the filling from bubbling out as the bacon tightens and cooks.

Oven method: If the weather turns on you, bake these on a rack set over a sheet pan at 400°F for about 25 to 30 minutes, or until the bacon is crisp and the peppers are tender.

Make-ahead tip: You can fill and wrap the jalapenos a few hours ahead, then keep them chilled until it’s time to grill. That makes them mighty handy for cookouts, game days, and holiday snack tables.
