1 packet dry onion soup mix, about 1 ounce
1 cup barbecue sauce

Directions

2. Sprinkle the dry onion soup mix evenly over the top of the pork loin roast.

3. Pour the barbecue sauce over and around the roast, then cover with the lid.

4. Cook on low for 6 to 8 hours or on high for 3 1/2 to 4 1/2 hours, until the pork is tender and reaches a safe internal temperature.

5. Transfer the pork to a cutting board, let it rest for 5 to 10 minutes, then slice and spoon some of the sauce over the top before serving.

Variations & Tips

Kid-Friendly Plate: For picky eaters, serve the pork sliced very thin with extra sauce on the side instead of over the top. That way everyone can add as much or as little flavor as they like, and it pairs especially well with buttery noodles or simple mashed potatoes.

Sweeter Version: If your family enjoys a sweeter sauce, use a honey barbecue sauce. It gives the pork a slightly sweeter finish that goes over really well with roasted carrots or corn.

Add Vegetables: If you want a fuller one-pot meal, tuck in baby carrots or small potatoes around the roast before cooking. They will soak up the savory sauce and make dinner even easier.

Slice or Shred: Pork loin usually slices best, but if your roast becomes extra tender, you can gently shred part of it and pile it onto sandwich rolls. A spoonful of the cooking sauce makes those leftovers especially delicious.

Don’t Overcook: Because pork loin is leaner than pork shoulder, keep an eye on the cooking time and check for doneness toward the earlier end of the range if your slow cooker runs hot. Letting the meat rest before slicing helps keep it juicy.
