Slow cooker 3-ingredient Amish bacon chicken is the kind of cozy supper that earns a permanent place in a busy family meal rotation. With just chicken, bacon, and a creamy soup-based sauce, the slow cooker does all the work while the bacon helps keep the chicken moist and flavorful as it cooks low and slow. It is simple, hearty, and perfect for days when you want a dependable dinner waiting for you at the end of the day.

This chicken is especially good served with mashed potatoes, buttered noodles, rice, or a slice of warm bread to catch every bit of the savory sauce. For vegetables, green beans, sweet corn, peas, or a crisp side salad balance the richness nicely. If you are feeding a crowd, add a simple fruit salad or applesauce on the side for an easy, family-friendly meal.

Ingredients

6 boneless, skinless chicken breasts

12 slices bacon
2 cans condensed cream of mushroom soup

Directions

1. Lightly coat the inside of your slow cooker with nonstick spray if desired. Wrap each chicken breast with 2 slices of bacon, keeping the bacon snug around the chicken, and place the pieces seam-side down in the slow cooker.

2. Spoon the condensed cream of mushroom soup evenly over the bacon-wrapped chicken, covering the tops as much as possible.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is very tender and cooked through.

4. Carefully remove the chicken and spoon some of the pan juices over the top before serving. For a nicer finish, you can briefly broil the cooked chicken for 2 to 3 minutes to crisp the bacon a bit more before plating.

Variations & Tips

For crispier bacon: Because slow cookers keep moisture in, the bacon will be flavorful but not always very crisp. If your family prefers crisp edges, place the cooked chicken under the broiler for a couple of minutes right before serving.

Soup swap: Cream of chicken or cream of celery soup can be used in place of cream of mushroom if that is what you have in the pantry or if you are cooking for someone who does not enjoy mushrooms.

Use chicken thighs: Boneless, skinless chicken thighs work well here too and stay especially juicy. They are a nice option for picky eaters who prefer darker meat and a softer texture.

Make it a full meal: Tuck small baby potatoes around the chicken during cooking if your slow cooker is large enough. They soak up the savory juices and make supper even easier.

Watch the salt: Bacon and condensed soup both bring plenty of salt, so this recipe usually does not need any extra seasoning. If you want black pepper, add just a light sprinkle at the table.
