Ingredients
2 1/2 pounds russet potatoes, peeled and cut into thick rounds
Directions
1. Lightly coat the inside of a 6-quart slow cooker with cooking spray or a little butter, then peel the potatoes and slice them into thick, even rounds so they cook at the same pace.
2. In a medium bowl, stir together the condensed cream of chicken soup, sour cream, 1 1/2 cups of the shredded cheddar cheese, and the onion powder until the mixture is smooth and creamy.
3. Add half of the potato rounds to the slow cooker, spread half of the sauce over them, then repeat with the remaining potatoes and sauce, gently pressing everything down so the potatoes are evenly coated.
4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are very tender when pierced with a fork.
5. Sprinkle the remaining 1/2 cup cheddar cheese over the top, cover again for 10 to 15 minutes until melted, then serve warm straight from the slow cooker.
