There is something wonderfully comforting about a slow cooker supper that asks almost nothing of you and still turns out rich, tender, and worthy of planning a whole week around. This Amish-inspired golden mushroom pork pasta has that kind of plain good sense Midwestern home cooks have always valued: simple pantry ingredients, pork chops laid in the crock, soup poured right over top, and by dinnertime a savory gravy ready to spoon over hot pasta. It is the kind of meal that feels thrifty, hearty, and deeply familiar, perfect for busy days when you want supper to take care of itself.

Serve this dish with buttered green beans, sweet corn, or a crisp lettuce salad to balance the rich gravy. Warm dinner rolls or a slice of homemade bread are mighty good for swiping up the extra sauce, and if you want to stretch the meal a bit further, a side of applesauce or glazed carrots fits right in with the cozy country character of the dish.

Ingredients

6 boneless pork loin chops, about 1 to 1 1/2 inches thick

2 cans (10.5 ounces each) golden mushroom soup
1 packet (1 ounce) onion soup mix
12 ounces egg noodles
2 tablespoons chopped fresh parsley, optional for serving

Directions

1. Lightly coat the inside of a slow cooker with cooking spray or a thin film of oil if desired, then arrange the pork loin chops in an even layer in the bottom.

2. Spoon the golden mushroom soup evenly over the pork chops, then sprinkle the onion soup mix over the top.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the pork is very tender and cooked through.

4. About 15 minutes before serving, cook the egg noodles in well-salted boiling water according to the package directions. Drain them well.

5. To serve, spoon the pork chops and plenty of the golden mushroom gravy over the hot egg noodles, then scatter parsley over the top if you like.

Variations & Tips

Add mushrooms: If your family loves an extra earthy flavor, add 8 ounces of sliced fresh mushrooms right over the pork before the soup goes on. They melt into the gravy beautifully and make the dish taste even heartier.

Use creamier noodles: For a softer, old-fashioned supper, stir a little butter into the drained egg noodles before serving. That small touch helps the gravy cling to every bite and gives the finished plate a richer texture.

Try chicken instead: This same method works nicely with boneless skinless chicken thighs if pork is not what you have on hand. Cook until tender and serve just the same over noodles for a cozy variation with a lighter flavor.

Watch the salt: Since both the golden mushroom soup and onion soup mix are well seasoned, taste the gravy before adding any extra salt. A little black pepper at the table is often all it needs.

Make it meal-prep friendly: Leftovers reheat very well, so store the pork and gravy separately from the noodles if you can. That keeps the pasta from soaking up too much sauce overnight and makes tomorrow's lunch just as good as tonight's supper.
