There is something mighty comforting about a supper that asks almost nothing of you and still comes out bubbling, creamy, and full of flavor. This oven baked 3-ingredients lazy pepper jack rotini is the sort of weeknight dish folks keep tucked away for busy days, when the cupboard is thin and everybody is hungry. It leans on the Midwestern love of baked pasta casseroles, with a little extra kick from pepper jack cheese, and it turns a short ingredient list into a pan of pure comfort.

This is a rich and cozy dish, so I like to serve it with something simple and fresh to balance it out, such as a crisp green salad, steamed broccoli, or green beans with a little butter and black pepper. If you want to stretch it a bit further, a slice of garlic toast or warm crusty bread goes right alongside, and for drinks, iced tea or cold lemonade fit the easygoing spirit of the meal just right.

Ingredients

1 pound rotini pasta

2 cups jarred Alfredo sauce
3 cups shredded pepper jack cheese, divided

Directions

1. Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.

2. Bring a large pot of salted water to a boil and cook the rotini until just shy of al dente, about 1 to 2 minutes less than the package directions. Drain well.

3. In a large bowl, stir the hot rotini with the Alfredo sauce and 2 cups of the shredded pepper jack cheese until the pasta is evenly coated.

4. Spoon the mixture into the prepared baking dish and spread it into an even layer. Top with the remaining 1 cup of pepper jack cheese.

5. Bake uncovered for 20 to 25 minutes, until hot and bubbly with lightly golden edges. Let it stand for 5 minutes before serving.

Variations & Tips

Make it milder: If your pepper jack has a little more bite than your crowd likes, use half pepper jack and half mozzarella. You will still get that lovely melt, but the heat will be gentler and more kid-friendly.

Sauce consistency: If your Alfredo sauce is especially thick, stir in 1/4 cup water from the pasta pot before baking. That little bit helps the sauce settle into the noodles and keeps the casserole extra creamy.

Add a little color: Though the beauty of this recipe is its simplicity, a small handful of chopped parsley or a dusting of black pepper over the top can make it look right pretty on the table without changing the easy nature of the dish.

For crispier edges: Bake it in a slightly larger dish so more of the pasta is exposed around the sides. Those browned, cheesy corners are often the first bites folks go after.
