This oven baked Amish-style cheddar jalapeño dip macaroni is the kind of shortcut casserole that saves dinner on a busy weeknight. Instead of building a cheese sauce from scratch, you spoon a jar of cheddar jalapeño dip right over dry elbow macaroni with a few pantry staples, then let the oven do the work. It has that comforting baked pasta feel with a creamy, cheesy finish and just enough jalapeño flavor to keep it interesting without making the whole dish fussy.

Serve this macaroni with a simple green salad, steamed broccoli, roasted green beans, or sliced tomatoes to balance the richness. If you want to stretch it for a bigger meal, it also goes well with rotisserie chicken, smoked sausage, or pulled pork on the side, and a piece of warm buttered bread is always welcome for scooping up the extra cheesy sauce.

Ingredients

16 ounces elbow macaroni, uncooked

1 (15 to 16 ounce) jar cheddar jalapeño dip
2 cups milk
2 cups shredded cheddar cheese

Directions

1. Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.

2. Spread the uncooked elbow macaroni evenly in the prepared baking dish.

3. Spoon the cheddar jalapeño dip over the macaroni in dollops, then pour the milk evenly over the top.

4. Sprinkle the shredded cheddar cheese across the top as evenly as possible.

5. Cover the dish tightly with foil and bake for 30 minutes.

6. Remove the foil, stir well to combine the softened macaroni and sauce, then return the dish to the oven uncovered for 15 to 20 minutes, or until the pasta is tender and the top is hot and bubbly.

7. Let the macaroni rest for 5 to 10 minutes before serving so the sauce can thicken slightly.

Variations & Tips

Add protein: Stir in 2 cups of chopped cooked chicken or browned sausage after the first covered bake when you remove the foil to stir. This is one of my favorite ways to make it feel a little more like a full one-pan dinner on a hectic work night.

Adjust the heat: If your jarred dip is especially spicy, use half cheddar jalapeño dip and half plain cheddar cheese sauce. If you want more kick, add a few sliced pickled jalapeños before the final bake.

Use the right milk: Whole milk gives the creamiest result, but 2% works well too. If the pasta looks dry before the second bake, splash in an extra 1/4 to 1/2 cup milk before returning it to the oven.

Don’t skip the stir: That mid-bake stir is what helps distribute the dip, melt everything together, and keep the pasta cooking evenly. It may look a little messy at first, but it comes together beautifully by the end.

Make-ahead note: This dish is best baked fresh since the pasta starts out uncooked, but leftovers reheat well. Add a small splash of milk before reheating to loosen the sauce and bring back the creamy texture.
