These 4-ingredient slow cooker potatoes are the kind of low-effort recipe that saves dinner on a busy weekday and still feels a little special for a casual celebration like National Just Because Day. Using whole unpeeled russet potatoes keeps prep wonderfully simple, and the slow cooker does all the work while the potatoes turn tender and flavorful. It is an easy, budget-friendly side that fits right into real life when you want something comforting without hovering over the stove.

Serve these potatoes alongside grilled chicken, roasted sausage, pork chops, or a simple green salad for an easy meal. They also pair well with sour cream, shredded cheese, chopped chives, or a little extra melted butter at the table, so everyone can dress up their portion however they like.

Ingredients

6 medium russet potatoes, raw, unpeeled, and whole

1/2 cup unsalted butter, sliced into pieces
1 packet ranch seasoning mix, about 1 ounce
1/2 cup chicken broth

Directions

1. Scrub the russet potatoes well under cool water, then pat them dry. Lightly grease the inside of the slow cooker if desired for easier cleanup.

2. Place the whole potatoes in the bottom of the slow cooker. Pour the chicken broth around them, then sprinkle the ranch seasoning evenly over the potatoes and top with the sliced butter.

3. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the potatoes are fork-tender all the way through.

4. Carefully remove the potatoes, split them open, and spoon a little of the buttery seasoned liquid from the slow cooker over the tops before serving.

Variations & Tips

Make it cheesy: Open the hot potatoes and add shredded cheddar or Monterey Jack right before serving so it melts into the centers. This is my favorite way to make the dish feel a little heartier when I am stretching it into dinner.

Use vegetable broth: If you want a vegetarian-friendly version, swap the chicken broth for vegetable broth. The potatoes will still come out tender and flavorful.

Add toppings at the table: Set out sour cream, chopped green onions, bacon bits, or extra butter so everyone can finish their own potato. It is an easy trick that makes a simple slow cooker side feel more fun for family dinners or potlucks.

Check for doneness by size: Larger russet potatoes may need a little extra time, especially on low. If your potatoes are extra big, start checking them near the end of cooking with a fork or thin knife so you can catch them right when they turn tender.
